Enchilada Soup Mix Thompson Farms


Enchilada or Santa Fe Tortilla??? Which ones better? I can’t choose. You should just choose to get both.


Ingredients: Onion, red and green bell peppers, garlic, corn, cumin, Mexican oregano, and black pepper.

2 chicken Breasts
1 can diced tomato w/green chili
3 chicken bouillon cubes or broth *
7 cups water
1 cup sour cream
Optional 1 can rinsed black beans (add during step 2)
To prepare:
1 Brown chicken in a 4-quart pot
cool and dice chicken.
2: Stir in hot water, Thompson Farm Soup mix, diced tomato w/green chili, bouillon cubes. Heat to a boil, stirring occasionally.
3: Reduce heat. Simmer for about an hour, stirring occasionally.
4: Add 1 cup of sour cream.
Salt & pepper to taste.
Optional: Add shredded Cheddar Cheese to each bowl to taste.
Serves 5–7
*If using broth, substitute 1 cup broth for 1 bouillon cube and 1 cup water. Total liquid added should remain the same.This recipe for the soup)
